Rude Native Chefs Win Culinary Combat PDF Print E-mail

On Tuesday May 4th, Chef Dan Burcher and Sous Chef Don Verge from the Rude Native in Burlington competed in a Culinary Combat competition to help raise awareness for the Halton Food for Thought program.

Held at the Robert Bateman School in Burlington, teams of local chefs and students went head to head in a culinary battle, being judged on creativity, knowledge and culinary skill. Teams were required to create a two course menu with a variety of ingredients from a large food basket and use of "secret ingredients" similar to Iron Chef competitions.

Chef Dan and team won the event by preparing:

Course 1- A warm spinach salad with grilled Portobello mushrooms, cumin infused green beans, mango chutney and a honey truffle vinaigrette.

Course 2- Chicken Supreme stuffed with morel mushrooms and parmesan on mango risotto with coconut chipotle sauce and saffron pimenton oil.

The "secret ingredients" were mangos, morel and Portobello mushrooms and whole chickens.
